Mint Chocolate Chip Cookies

This month's What's Baking theme is "Favorite Snowday Treats." I consider January, February, and March the gray months. They are typically cold, dark, and filled with snow. This winter has been mild and we haven't gotten much snow at all. (I'm not complaining!) It's making me crave the warm, summer weather and all that comes along with it such as ice cream. One of my favorite ice cream flavors is mint chocolate chip and when I saw these mint chocolate chip cookies, they immediately made me think of ice cream. I chose these cookies as my "snowday treat" because on these snowy (well, snowless) days, all I want to think about is the summer weather! And these cookies delivered the mint chocolate chip ice cream flavor I had been craving.

Mint Chocolate Chip Cookies

1 cup white sugar
2 sticks butter
1/2 teaspoon vanilla
1/2–1 teaspoon mint extract (depending on how minty you want them) 
8-10 drops green food coloring
1 egg
2 and 1/3 cups flour
1 teaspoon baking powder
1 bag (12 oz) mint chocolate chips

Preheat oven to 350 degrees.
Beat together butter and sugar on low speed of stand mixer until light and fluffy.
Add mint extract, food coloring, and egg and beat on medium speed until well combined.
Whisk together flour and baking powder in a bowl and slowly add to the butter mixture, beating on low speed until combined.
Stir in mint chocolate chips.
Roll into 1-inch balls and place 2 inches apart on a cookie sheet. Flatten balls with the bottom of a glass.
Bake 10–14 minutes.
Cool completely on wire racks.
