My husband's coworker recently gave me a bread machine. I'm not a huge bread eater, but I do love that I can make pizza dough with it. After finding this tutorial on how to make pizza dough, I popped all my ingredients into the machine and let it do its thing. I was left was some beautiful pizza dough. I decided to skip the pizza and make stromboli instead. After working it to the thickness I wanted, I filled it with a mixture of buffalo chicken and cheese. I popped it in the oven and out came a gorgeous stromboli. It was spicy, cheesy, and delicious. Next time, I have to use the bread machine to actually make bread.
Buffalo Chicken Stromboli

Ingredients:
1 pizza dough recipe
3 chicken breasts, cooked and shredded
1/2 cup buffalo sauce
1/2 cup bleu cheese crumbles
1 - 1 and 1/2 cups shredded cheese
1 egg, beaten
Directions:
Preheat oven to 375 degrees.
Roll out dough and shape into a rectangle.
Mix together chicken, buffalo sauce, and bleu cheese crumbles.
Spread mixture on dough, leaving a 1-inch perimeter.
Cover with shredded cheese.
Roll lengthwise into a log.
Brush with beaten egg.
Place on a greased cookie sheet and bake for 20 - 25 minutes.

Buffalo Chicken Burgers
As I've mentioned before my husband loves anything buffalo, so I'm always on the lookout for different dishes involving buffalo sauce. I'm new to the world of ground chicken and at first, I was afraid of under- or over-cooking it. I think I got it down. It's actually hard to find here, unless you want dark meat. I finally found some and stocked up. I know I can ground my own, but I'm just not there yet. I loved the texture of these burgers. I expected the meat to be a little dry, but it was moist and flavorful. I stuffed these with bleu cheese, but most of it melted into the meat. Regardless they were delicious. The hot sauce gave the meat a nice kick and the bleu cheese cooled it down. These are perfect when you're in the mood for wings, but not the mess.Buffalo Chicken Burgers

Ingredients:
1 pound ground chicken
2 - 4 oz. bleu cheese crumbles (I didn't measure.)
1 egg (I omitted.)
1/2 cup bread crumbs
1/4 cup - 1/2 cup buffalo wing sauce
salt and pepper, to taste
Directions:
Preheat oven to 400 degrees.
Mix ground chicken, bread crumbs, egg (if using), wing sauce, salt, and pepper in bowl with hands until well mixed. If mixture is too wet, add extra bread crumbs. Divide mixture into eight even pieces.
Flatten each piece into a patty. Top four of the pieces with cheese crumbles and top with another patty. Close up the sides.
Place burgers on a greased cookie sheet and bake for about 20 minutes, flipping halfway through.
Top with extra bleu cheese and wing sauce, if desired.

Buffalo Chicken Sloppy Joes
Sloppy Joes are a summer staple at our house. Now that it's spring, it's time to pull out those warm weather recipes. I filed away this
recipe last year and I totally forgot about it until I saw it again on Christine's Cuisine last week. My husband loves buffalo wings, so I'm always on the hunt for anything buffalo. The original recipe calls for onions, celery, and carrots, but we don't like crunch in our sloppy Joes, so I omitted them. I served this on kaiser rolls with lots of bleu cheese crumbles. The end result was delicious. The brown sugar gives the spicy sauce a hint of sweetness. This is a meal that gets better as it sits, so the meat gets a chance to soak up the sauce.
Buffalo Chicken Sloppy Joes

Ingredients:
2 tablespoons canola oil
2 pounds ground chicken
2 teaspoons minced garlic
Salt and pepper
2 tablespoons red wine vinegar
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1/3 cup hot sauce, such as Frank’s Red Hot
1 cup tomato sauce
1 cup chicken stock
1/2 cup bleu cheese crumbles (for topping)
Heat canola oil in a large skillet over medium-high heat. Add the meat and break it up with wooden spoon, cooking until no longer pink. Add the garlic and season with salt and pepper. Cook an additional 7 - 8 minutes.
In a bowl, whisk together the vinegar, sugar, Worcestershire sauce, hot sauce, tomato sauce, and stock. Pour into the pan and stir to combine. Simmer a few more minutes. Place filling on the buns and top with bleu cheese crumbles.

Crack Dip (Buffalo Chicken Dip)
It's called crack dip because one try and you're hooked. I first tried this dip at a potluck at my old job. (I really miss those potlucks, the job not so much.) What can I say about this dip? Every time I make it, people go nuts. It looks ugly and is not one of the healthiest things to put in your body. But it tastes just like a chicken wing dipped in bleu cheese dressing. This dip is creamy and spicy and addictive. It's a hit at a party!

Ingredients:
3 chicken breasts, cooked and shredded
2 (8 oz.) blocks of cream cheese
1/2 - 3/4 cup Frank's RedHot Buffalo Wings sauce
1 cup bleu cheese dressing (or ranch)
1 cup shredded cheese
1/4 cup bleu cheese crumbles (optional)
Directions:
Cook chicken breasts. (I poach them in the crock pot for 4 hours on low.)
Shred chicken with two forks and place in crock pot.
Add remaining ingredients to crock pot and mix well.
Cook on low for 1 hour and then keep on warm.
Serve with tortilla chips and celery.

Hot Honey Garlic Chicken Wings
My husband broke out the Winganator this past weekend.It's actually a Rival "Wing It" deep fryer made for frying chicken wings that Randy calls the Winganator. I got it for him the Valentine's Day right before we got engaged in 2006. I gave him the gift of deep frying and he gave me an engagement ring. I think we both won.
Randy has been dying to make fresh chicken wings since football season started. We were in the grocery store and he stated yet again, "We have to make fresh wings." I stopped him right there and demanded to know what these fresh wings were. He explained that fresh wings taste much better than the frozen ones. I didn't argue and he got his fresh wings. He tossed the wings in a sauce close to the one we always get at one of our favorite restaurants called The Tipsy Turtle. It was a nice mix of heat, sweet, and garlic. No kissing after these wings.
Hot Honey Garlic Chicken Wings
Ingredients:
1 dozen fresh chicken wings1/2 cup Frank's RedHot Buffalo Wings sauce
1 tablespoon garlic
1 and 1/2 tablespoons honey
salt & pepper, to taste
vegetable oil, for frying
Instructions:
Fill Winganator (or deep fryer or deep pan) with vegetable oil. Preheat oil to 375 degrees. Salt and pepper wings.
Drop wings carefully in fryer. Fry for 10 minutes. Remove wings from fryer and drain on paper towels.
Combine hot sauce, garlic, and honey in a large bowl and mix well. Toss wings in sauce to coat. Transfer wings to a 250 degree oven to keep warm between batches.

Three Cheese Buffalo Shrimp Pizza

We had decided to make pizzas on New Year's Day for a late dinner, since we had a big pork dinner at my mom's in the afternoon. We were going to make just cheese pizzas. But then we wanted some kind of toppings that didn't involve a trip to the grocery store. I had some leftover buffalo sauce and bleu cheese crumbles from making crack dip for New Year's Eve, plus a bag of cooked shrimp in the freezer. This pizza was so tasty and easy to make. I got the idea to mix the pizza sauce with the buffalo sauce from our favorite pizza place. Three Cheese Buffalo Shrimp Pizza
Ingredients:
Favorite crust recipe (I used pre-made.)
1 pound cooked shrimp, deveined and tails removed
1/2 cup pizza sauce
1/2 cup plus 1 tablespoon buffalo sauce
1/2 - 1 cup shredded sharp cheddar cheese
1/2 - 1 cup shredded mozzarella cheese
1/4 cup bleu cheese crumbles
Directions:
Roll out crust onto greased cookie sheet.
Preheat oven to 400 degrees as indicated by crust instructions.Toss shrimp with 1 tablespoon buffalo sauce.
Mix together pizza sauce and buffalo sauce.
Top crust with sauce mixture.
Top sauce with shrimp and bleu cheese crumbles.
Cover with cheddar and mozzarella cheese.
Bake 12 - 15 minutes per crust directions.

Go Blue! Buffalo Chicken Pizza
GO Penn State! As most people know, I graduated from Penn State and I am a huge PSU football fan. Randy and I managed to get to the homecoming game last weekend. They defeated the MN Golden Gophers 20-0. A very good game, despite the snow. Last night, I whipped up some buffalo chicken pizza for us while we were watching the game on TV. PSU played a good game and finally defeated Michigan on their turf—first time since 1997! This pizza is spicy and delicious, plus quick to whip up, especially if you use pre-made crust as I did. I made it during half-time with time to spare.
Go Blue! Buffalo Chicken Pizza
Ingredients:
Favorite crust recipe (I used pre-made)
1 pound boneless chicken, cut into bite-sized pieces
1/2 - 1 cup cup favorite buffalo sauce
1/2 - 1 cup shredded sharp cheddar cheese
1/2 - 1 cup shredded mozzarella cheese
1/4 cup bleu cheese crumbles
1 - 2 tablespoons canola or olive oil
salt and pepper
Directions:
Prepare crust as directed.
Preheat oven to temperature indicated by crust instructions.
Salt and pepper chicken.
Saute chicken in canola oil in a skillet over medium-high heat, until no longer pink.
Toss chicken with buffalo sauce.
Top crust with buffalo chicken mixture.
Top chicken with cheddar and mozzarella cheese.
Sprinkle bleu cheese crumbles on top.
Cook according to crust directions.
Serve with bleu cheese, celery, and cold beer.

Bleu Cheese Stuffed Buffalo Chicken with Roasted Seasoned Potatoes
My husband loves anything buffalo—chicken wings, crack dip, potato wedges, fries, chicken fingers, etc. Every time we go out he orders wings. He requests this dish quite often and I don't mind since I love buffalo, too. This recipe isn't figure-friendly, but it is definitely healthier than deep fried wings, plus it's delicious. I made seasoned roasted potatoes on the side.Bleu Cheese Stuffed Buffalo Chicken
Ingredients:
4 boneless, skinless chicken breasts
1/4 cup ranch dressing
1/4 wing sauce
4 - 6 tablespoons bleu cheese crumbles
1 cup bread crumbs

Lightly spray baking pan with nonstick cooking spray.
Mix together ranch dressing and wing sauce.
Cut a slit in the middle of each chicken breast.
Pack chicken with bleu cheese.
Brush wing sauce mixture on both sides of chicken.
Coat chicken with bread crumbs.
Bake for 30 - 35 minutes.
Roasted Seasoned Potatoes

4 large potatoes
1/2 green bell pepper
1/2 green bell pepper
2 - 3 tablespoons canola or olive oil
1 teaspoon cumin
1 teaspoon ancho chili powder
Sea salt and cracked black pepper

Lightly spray cookie sheet with nonstick cooking spray.

Chop potatoes and bell pepper into bite-sized pieces.
